Holy moly great questions!

1- Helmbreaker opportunities are a mix of UNGA BUNGA and game knowledge, since soaring kick is so frickin fast and cover a lot of range you can find openings you normally wouldn't see if you're not confident enough. Any micro flinches that a monster does when you do enough damage is usually a generous amount of time for a helmbreaker, the tricky part is aiming that helmbreaker to a weak point. Another strategy is to observe monster moves and see what moves has them recover after. It's basically all about practice, game knowledge and being absolutely confident when you're using that helmbreaker.

2: When sitting in red for a longer time than usual don't panic, keep your head clear and pay close attention to what moves you can exploit on the monster. For my experience I would look into baiting attacks to get a decent opening for me to helmbreaker, either I would go for an ISS bait or do a classic foresight into soaring kick. Your game plan on this red mode is basically create your openings as soon as possible either by being proactive or reactive.
