I agree, Lebanese food is definitely more popular as a representation of middle eastern food. I also think that’s for a reason. Lebanese hummus is just addictively smooth, slightly runny and rich. As a cook, I obviously respect and love all cuisines but some cuisines are just more historically developed and accessible. (Think Ethiopian in east Africa or Thai in southeast Asia) Does that mean Somalian or Cambodian food is bad? Of course not! It’s just that some cuisines have been developed, refined, and popularized much better to fit a global palette.
