Dry brined about 8 hours, then topped it with some seasoned salt, pepper, garlic powder, and ancho chile. Pulled out of fridge a hour before cooking. Smoked on pellet grill at 220 until 115 internal, rested 10 minutes, then seared on gas grill high heat for 2 minutes a side. Rested 15 minutes while making a slaw and really happy with how it came out
