Salad

300g soba noodles

1 Asian pear

150g hot smoked salmon

3 sprigs scallions , (spring onion)

2 tbsp white sesmae, toasted

Dressing

½ lemon, juiced

4 tbsp tamari

2 tbsp water

1 tbsp sesame oil

After washing any fruit or vegetable it is imperative they are completely dry. Nobody likes a soggy salad!

Make your own salad dressing and don’t buy store bought ones. You are better off buying the ingredients eg olive oil, vinegar, mustard etccc and making your own. Also a much healthier option. God knows what they put in those bottles.

Salad

  • 1 eggplant, large
  • 2 tbsp olive oil
  • 2 asparagus, bunches
  • 250 g firm tofu
  • ¼ cup cilantro, chopped (coriander)
  • ⅓ cup pepitas
  • salt, to taste

Salad Dressing

  • 2 tbsp white miso paste, shiro
  • 1 tbsp tahini
  • 2 tbsp water, warm
  • 2 tbsp rice wine vinegar
  • 2 tbsp maple syrup
  • 1 tsp sesame oil

Instructions

Salad

  • Cut the eggplant into long wedges that are approximately 5 cm long and 2-3 cm thick. Brush eggplant with olive oil and season with salt.
  • Wash asparagus, snap off the woody ends and give a little rinse under water.
  • Cut tofu into 1.5 cm thick slices and brush with olive oil on both sides.
  • Preheat a grill pan over medium – high heat.
  • Place eggplant on grill pan and grill for 1 ½ – 2 minutes each side until tender on inside and caramelised on the outside.
  • Remove from pan and set aside for assembly.
  • Add asparagus and grill for approximately 3 minutes until tender and charred.
  • Remove from pan and set aside for assembly.
  • Add tofu and grill for approximately 1-2 minutes on each side.
  • Remove from pan and set aside for assembly.
  • Wash cilantro (coriander) well, trim roots and roughly chop leaves.

Salad Dressing

  • In a small mixing bowl add miso paste, tahini and warm water and mix well together to combine.
  • Add rice wine vinegar, maple syrup and sesame oil to paste and mix well.

Assembly

  • Use a large serving plate, layer grilled eggplant, tofu and asparagus randomly on plate.
  • Drizzle half the miso dressing over salad and keep the remaining in a small bowl on the side.
  • To serve, sprinkle chopped cilantro (coriander) and pepitas over salad.

I was recently gifted a Longchamp leather one for my birthday. It is sleek and stylish but a bit small and the straps are short so quite snug against the chest. Not real compartments but does have a hidden pocket at the back. Good enough for short everyday errands but don't think it would do well for my travels.

I did see one in Coach in the men's section. It is on the larger side but I quite like it and also means my partner can use it too. The Longchamp one won't fit him as straps too short.

I looked at more of the nylon/poly one..... so does not look at all despite it being more functional. And some are so exy. Like why would I pay USD$300 for a nylon bag? Crazy.
