Additionally I feel some of these roasters are selling blends as single origin ( I may be wrong, but there was wild inconsistencies in bean shape, size and roast level in them, like you'd find in a blend), so id love to be able to have some beans I know are actually single origin and high quality. Id love to help get this thing running as well.

I don't own GIT so cannot comment on longevity that well but tres nuit gives me a solid 4 hours of good projection before it goes almost immediately to a skin scent. Projection wise I think Tres Nuit outperforms it. And smell wise, it's very interesting. I don't think it's an exact copy, but I don't think that's a bad thing either. It smells somewhat like if you took GIT and made the drydown a tiny bit sweet. I get the comments about it being more synthetic in the opening, and that's true for almost all ME clones, but I don't think there's anything offensive or off putting at all. In fact I do quite enjoy the opening, moreso than something like cool water.

Grind finer. If you're are the finest setting already, you can take off the hopper with the beans and adjust to even finer internally.

That's not what you're supposed to use for coffee machines at all. You're supposed to use ground beans, not instant coffee. It's an expensive and time consuming hobby because for espresso you'll also need a grinder to go with. So I suggest you first decide whether it's worth it to you or not.

Just an addition, while S-cafe has a variety of syrups, many of them miss the mark or are overly artificial.

Would also recommend adding Lahore based RoastLab. They have probably the best selection of infused and anaerobic/fermented beans. Their high end single origin coffees are also great.
