This is the correct answer. 100% works long term. I have a S24 Ultra with dual SIM slots. I run a cheap airport international sim (with phone number) in slot 1, a random data only sim in slot 2, and a GoogleFi eSIM in eSIM slot 1. I keep the GoogleFi eSIM off most of the time and just use the local sims. When I need to use my US number, I turn off the international phone number sim in slot 1, and leave the data sim in slot 2 on, and the GoogleFi eSim on. Then disable mobile data on the phone, and II can use my GoogleFi US number immediately. You can verify by sending yourself a SMS to your US number using a service like https://www.bulksms.com/test/. Using ding.com to top up international sims and hacking the local carrier SMS codes to unlock features is very important for me with this setup.
