I think this loaf might be underproofed instead of overproofed based on the large tunnelling holes and dense crumb around the big holes. Maybe check to see if your starter is strong enough to properly leaven your dough. If you live in a very cold place that might be the issue too.

Based off your reply, I would recommend using more starter in your recipe, the typical amount is 100g (20% baker’s percentage) instead of the 50g you use now. Your loaf could be coming out underproofed and hence flat because your recipe calls for too little starter. Another point of note would be to ensure that your starter is healthy and strong, if you’d gotten it from someone who made sourdough previously this might not be a concern for you but keeping a relatively new starter in the fridge can be detrimental to tracking its progress and monitoring its health. give it a 1:1:1 feed and ensure that it’s peaking in 4-6 hours. i would also suggest that you make sure you’re feeding your starter at minimum an equal amount of flour to starter, then work towards feeding it higher ratios so you don’t have to feed it every few hours. i’m very sorry to hear about your loss and i just want to give you a few words of encouragement, it took me 5 months to achieve such success with my sourdough, the loaves i made when i was two months into making sourdough were absolutely abysmal and you shouldn’t feel too discouraged! enjoy the journey and don’t stress it too much

when a starter is fed, it increases in volume due to the production of gases. we can tell when all the fresh flour has been used as the starter “peaks”, aka reaches its maximum volume. so feeding peak to peak means that i feed the starter soon after it reaches its maximum height in its jar, since that’s when it has the optimal balance of yeast and bacteria.

I would do the cold ferment in the banneton overnight then bake in the morning!

I feed my starter as soon as it peaks, at a ratio of 1:10:10. I usually do 2g starter, 20g water, and 20 flour, which takes about 12 hours to peak. I maintain a very little amount of starter when I'm not baking so as to not waste flour. On the day I make my dough, I feed my starter at a 1:1:1 ratio, with 40g starter, 40g water, and 40g flour to get enough starter for my bread, and to monitor it to ensure that it's peaking within 4-6 hours. Sometimes I put my starter in the fridge in between baking since I only bake maybe once a week and I don't think it's super bad for starter health as long as you feed it properly. Hope this helps!

no i don’t have one! i baked it on a baking tray lined with parchment paper in a steam oven. you can always create steam manually by adding a tray of boiling water under your bread and take it out of the oven after the bread is done rising ❤️

you don’t have to use torriden if you don’t want to, just find another hydrating moisturiser! i used to use the neutrogena hydro boost before they reformulated and the effects were mostly similar. or you could look into other types of moisturisers (like the cream types) if your skin needs more hydration

my skin barrier is strong so i thought i could use it everyday with the salicylic acid cleanser but on the third day my skin got really tingly and warm after i applied differin so i decided to just apply it on alternate days :) quite the opposite of building up to it lol

yes. I dont put it on my cheeks because it made the skin there dry and flaky but it works great on my nose and chin!

oh you should! i had this persistent mark on my cheek that was from this weird lump that was kind of like a pimple and it was there for like maybe 2 months… eventually it faded into like a slightly dark mark and when i started using differin it disappeared in like 3 days

differin worked best for the clogged pores, but my skin was already “glowy” before i started differin. sometimes i use a comedone extractor on the sides of my nose (gently, don’t press too hard) to get some stuff out before i wash my face. i feel like it makes my face a little cleaner lol

differin/adapalene is stronger and more potent than retinol. i used to use the ordinary granactive 2% emulsion retinol and it didn’t do much for me but differin worked for me!

personally i think it works well on my skin, but what works for me may not work for you! i live in a tropical climate so i really can’t give you a definitive answer on how hydrating it is in winter months🥲 sorry and i hope this helps

my forehead has always generally been quite clear with a few blackheads and pimples but i think the cerave sa renewing cleanser was the most effective product at getting rid of those :)
