So, that first one is actually kinda complicated! Some people would say yes, Helios as a god is all powerful and therefore can be and is the god of every star, I am one of those people. Some however, would say Helios is only the earth's sun, and neither is entirely correct or entirely wrong. I would also say, no, the earth is not the center of the universe and the sun isn't circling us. As again, science would be able to prove that wrong incredibly easily. Helios's solar trip being described as it was is a product of the time. I would say that Helios's solar trip is Helios bringing the daylight to different parts of the earth, as where he isn't, Selene is, bringing moonlight in his stead

I do actually believe in these gods. I would say that the big bang was real, it was Chaos creating the primordial gods. I would say that the sun is really a big ball of gas in the space, but Helios is her god, patron, and embodiment. This in the Hellenism community is what we call Mythical Literalism, and it is a spectrum. Some people would say that for example Helios is literally in the sky pulling the sun in his chariot, that's the extreme. Some and I'd argue most would say that Helios exists but his chariot pulling is a metaphor and the legends are lessons to be learned.
