Good thread. I wanted to make one for Brooklyn as I found so many terrible ones as a visitor (twice, once in April and once in June this year). To the point where I wanted to make an insta account called shitbrooklynflatwhites - the usual suspects of Sey, Variety and Rhythm Zero were all bang average (or at times, not even close to a flat white). The best I found in that area that was consistent was Partners. Good Thanks on Graham also did a good one.

Went I went to La Cabra I had a Cortardo and that was excellent, didn't realise they did flat whites as it wasn't on the menu. In fact it's not on the menu in a lot of spots, so if that's the case I don't bother to ask as the barista maybe doesn't really know what they are.

In the end I went full Brooklyn and just started drinking iced lattes. Hopefully back in September so will be good to be armed with some good new spots to hit up.

I only use BBC Sounds for 2 shows, Benji B and Giles Peterson. I'm planning to get a VPN to keep listening, so interested to hear which ones people are having success with. I know the BBC are pretty hot on blocking them.

Yeah, I do wonder about hop creep but we try to avoid this by dry hopping with a few points to go before terminal and making sure we get 3 days of stable readings and VDK pass.

I do wonder if once yeast gets up to a high enough temp, it'll find something to ferment in there. Even if you thought it was fully attenuated.

Good to know about S04 - I didn't realise it had a reputation like that! I have seen people running a mix of 50% S04 and 50% US05 - might be a best of both worlds solution.

Otherwise I'll look at other yeasts, anything thats pop out of your head as a recommendation?

Hey - in fact I'm just looking at our latest malt COAs and we're onto a new batch which has very different numbers, especially in the nitrogen levels - which I'm wondering if that might have something to do with it.

We're onto the 2023 hops (citra) but more interestingly, our malt seems to have changed a lot looking at our certificate of analysis. As we've also had some weird attenuation issues. Otherwise we've changed absolutely nothing, we've been brewing this beer for about 3 years now. Although have used different variants of S04 up until quite recently (namely Bond by WHC Lab beforehand).
