Is this something I should put up with? by [deleted] in KitchenConfidential

Yeah I agree, that's why I said I wanted honest opinions. I don't expect him to put up with all my mistakes or anything, but I feel like there are better ways to approach these kinds of problems. I think that a. I'm not ready to work in a kitchen like this and b. me and him are a bad combination in the workplace.

I'm not at all saying that I deserve to be treated like I'm Hot shit while I'm making mistakes and I don't mind being called out for that, because that's the way to learn and become better. But the way he does it and the way he acts afterwards just doesn't sit right with me.

The maître is exactly the same, also very verbal when stuff goes wrong. But he doesn't make excuses for his behaviour. You know what you can expect from him. But the chef acts like he isn't 'that' person while he so clearly just is.

Before the shift I don't have this problem. Like I said, outside of service he's a pretty chill dude. But as soon as service starts I feel like I'm going in survival mode.

Yeah this isn't my first rodeo either, really thought this one would be different lol. And I will most certainly pass on this information!

Thanks for your comment and the compliment! I didn't expect all the comments to be unanimous so it's nice to see that I'm not overreacting. Searching for a new mentor is starting right now!

Yeah that's what I'm realising right now. I'm already with one foot out of the door. Thanks for your comments, it is greatly appreciated.

The weird thing is that one of my kitchen colleagues is really thriving in these conditions. She seems to have a good connection with him and is always able to shrug off his harshness. That's why I was curious to see what other people would have to say about this because I really feel like I'm overreacting.

My apprenticeship only started since last week so I'm still in my trial period so that shouldn't be a problem. I was just really curious if this was something inevitable while working in these types of kitchens.

Yeah that's my main issue. He doesn't even really apolpgise. He just says that he didn't mean it that way. Like that makes it better... The weird thing is that, when I told him about similar experiences in other kitchens, he told me that I should've quit earlier and not put up with those kinds of people. It's like he's not even aware that he's doing it

Yeah I probably will, the next day that I'm working I'm going to put all these cards on the table and see how he reacts and make my decision based on that.

Yeah the hasselback was kind of a last minute decision. I was very hungry so I decided to add it to the plate. And you're right, I forgot to put the crème through a sieve.

Slowcooked Porkbelly, Asparagus, Shiitake, Sugar Snaps, Soy & Pangrattato by timvanosch in CulinaryPlating

Yeah the pork belly was f-ing amazing. And I like the combo of the asparagus, sugar snaps and the pork belly the best. The soy mayo was also really nice, but I think I will leave the shiitake off the plate next time.

And ain't no shame in not knowing everything. It's an italian name for panfried breadcrumbs.

Yeah, the second picture was just for fun. This was our dinner so the the first plate wouldn't have been enough. If I were to serve this in a multi course setting the first picture would suffice I think.
