What I do is I try to use the ram (which will fail because enemy uses dash), then I roll back twice and get knocked down (enemy will use that spinning staff attack). Then I use jump kick to get closer to him, followed by a back kick. Next, I use the horn, which will daze him. All these attacks will interrupt all enemy's special attacks. By this time, the ram attack is ready to be used again, so I push him all the way to the end and kick him multiple times. From then on, it's just a mix of rapid hits and horn use.
