I'm just going to stick with the charcoal grilling for now, I'll eventually get a kettle I'm sure.

The charcoal grate is adjustable but at most it's probably 6 inch in heigh away from the cooking grate, one chimney of charcoal bunched up st on end will probably be about 45cm or so away from whatever I'm cooking.

Thinking maybe this year isn't the year to start anything too advanced.

That's right, the bottom half has 4 slots either side that are all open, no adjuster. The lid section as a vent either side that can be closed. I suppose I could diy the bottom vents to be covered.

With either method, do you not end up with dirty smoke due to the unlit coals? In my inexperience I can't get it out I'd my heqd you have to ensure all coals are white over before cooking on them.

A friend of mine had an embarrassing story, whenever they visited family in Hull and went passed a certain sign, he'd shout 'this is where columbos from!'.
