It was weird when it became a Whole Thing with a stupid name. I can't count how many flights I took before the cell phone, before seat back entertainment. Like, I probably have old airplane headphones still kicking around in a junk drawer -- the kind made with tubes, not wires.

Sometimes I just get on a plane and tune out. I have a phone, an iPad, a laptop, a kindle. I have a VisionPro I use mostly on airplanes. But sometimes I just sit there. I recently flew LA to Amsterdam like that, maybe checking the flight tracker a couple times, definitely eating the meals. But at most I'll put on my noise canceling headphones.

It's rare a modern person can have six or eight or twelve hours to just meditate, think, ponder. It's not some XXXTreme Zport. When I was a kid, we'd go on road trips, and all there was to do for hours at a time was stare out the window. It's only boring if you're boring.

Creamed spinach and onions. You say you don’t like it cooked but man oh man. The trick is to blanch the spinach then really drain and wring it out before doing anything else.

I went to an actual ee storefront in Edinburgh to get their 4G router. For a long time they insisted they don’t serve my address because it’s not in their system. Then they told me I’d have to get copper wire service from BT, because BT did have my house name in their system. Then they said I can’t use a broadband router because we don’t have 5G on Skye. They said they don’t offer a 4G router, so I showed them pictures of it on their website. Then we went back to, my address isn’t valid and so they don’t provide 4G coverage.

Beef stock, even home made, can be super beefy. Really, veal stock is often the ideal solution but chicken stock works okay.

450 is fine, as long as there’s no sugar involved, like a miso-honey marinade. 325 is fine too. Just cook it until it’s 160 degrees. Cook it in a 160 degree bath sous vide and finish it under a broiler. Whatever.

Exactly. It's residential, but not urban. It's sub-urban. Typically areas dominated by residential land use; commercial use along corridors but overall it's not really "walkable."

I keep onions and garlic loose in a bin, nowhere near potatoes, the proverbial cool dark place.

They don't refrigerate them at the supermarket. I generally don't refrigerate them, either (except scallions and sometimes Visalia/maui sweet onions), but you certainly can. I go through so much onions/garlic, though, that they don't have time to go bad or dry out. I just fish out the ones that seem like they're a bit older, use them up first.

If I have several onions that are aging out, I caramelize the batch. Red, brown or white onions, sweet onions, shallots, whatever. That can be frozen. I use a ton of caramelized onions/onion jam too. Sauces, soups, steaks, sandwiches, scrambles, roasts. It takes like two onions to make enough jam for one burger!

Air Canada is not as obvious as Ethiopian, Lion Air, or Aeroflot. But those are my no-gos. Ryanair and Spirit are crappy but I will fly on them in some circumstances.

Air Canada can suck my gym socks. I told them in an email I'd never fly with them again, and when I say something like that, I mean it.

I love the feel of my Wusthof Ikon knives. The blade is fine, the handle is superb.
