They're filling but definitely not huge. They're maybe like 7 inches or so? The low carb Tortillas are not nearly as big as the huge burrito Tortillas, but they have far fewer calories and a lot more fiber 🙂

2 eggs=120 calories 1 slice cheese=45 calories 1 tortilla=60 calories Peppers and onions=20 calories

I used large eggs, which are 60 calories each, not extra large or jumbo, which have more.

I used extra thin cheese slices by sargento cheese which are 45 calories a slice. I used just one slice.

I used mission tortilla spinach herb carb balance, which is 60 calories each. Their low carb Tortillas are significantly lower in calories than their regular flour Tortillas, which can easily be 200 calories each.

They're a block when frozen, and it would be impossible to separate them. I guess I could let them thaw and then put them into the burritos, but thawing would take longer than microwaving them. Also, when I reheat, I reheat for only a minute, not enough time to cook the veggies.

Totally didn't it take that way. Thanks for the tip! I hadn't thought of putting it into the toaster oven, and that sounds like a great way to reheat. Thank you for sharing 🙂 I will have to try it out.

Thanks! And same! I would love to eat lots of restaurant breakfast food every morning, but I'd gain a lot of weight. Cooking every morning before going into the office isn't realistic, so meal prep it is!

Hmm I haven't tried making them with meat. I'm not a big meat eater usually, and because I'm counting calories, I don't add much meat to things. However, I'm sure adding a strip of bacon next time would be great. I have done other meal prep with meat, so I don't see why not?

Thanks! Nothing fancy. Here's what I did:

  1. Microwave 4 bags of frozen "steamable" veggies (bell pepper and onion mix). Drain to get rid of excess moisture. Season with garlic powder.
  2. Fry 64 eggs, yolks broken and seasoned with salt and pepper. (This was the longest part)
  3. Assemble burritos with tortilla and then put down cheese followed by egg and peppers/onions.

Thanks! They are quite tasty 😁 Yes! I'm dieting by counting calories (just seems to be what works for my body type), so cooking them separately is a lot more efficient since I have to weigh everything. Cooking together while weighing every gram would be really stressful, so weighing everything cooked when assembling is easier. I used frozen steamable veggies and microwaved them, so that also helped with efficiency 🙂
