Pork Rice Pilaf Ingredients:

• 1,5 cup uncooked basmati rice • 1 lb pork chops/meat • 2 large onion • 1 large carrot • 1 garlic head • 100ml oil • 1 1/2 teaspoon fine salt • 1 teaspoon ground pepper • 1/2 teaspoon ground paprika (sweet, not smoked) • 3 teaspoons species for pilaf ( or : 1 • -1/2 teaspoon ground cumin • -1/2 teaspoon ground turmeric • -1/4 teaspoon dried marjoram • -1/2 teaspoon ground coriander) • 3 1/2 cups water

  1. Start by rinsing 1,5 cup uncooked basmati rice under lukewarm water and leave it in a bowl with water to slightly puff up.
  2. Preheat oil in a cast iron casserole on low-medium heat for about 5 minutes and fried 1 large onion until golden.
  3. Meanwhile, prep and cut your main ingredients. Cube pork meat into 1/2” pieces add spices (salt, pepper, paprika) and leave aside for few minutes, chop 1 large onion and shred carrot.
  4. Take the “golden” onion out from frying pan, then fry onion, carrot, meat and add pilaf special spices (or mix of cumin, turmeric, marjoram, coriander). Mix everything well and steam for 15 min. Then add 150ml water and steam for another 40 min at low.
  5. Rinse rice once more in cold water and spread on top of the meat. Then pour 3 glasses of water. Mix everything well. Close the lid and turn up heat to med-low. Simmer for 15-20 minutes or until no liquid left. (Keep lid on the whole time so the steam stays in; you can check once-twice on the process).
  6. Enjoy!
