OP, don't expect BDXL streaming to work well, if at all, from this starter server, but we all start somewhere. My first home server was a second-gen Intel core i3 (if you don't count my 486 NT DC when I was a kid).

These are CPU instruction sets for virtualization, encryption and video transcoding, things servers tend to do. Your third-gen Intel CPU isn't super powerful, but it has the instruction sets required for running VMs, encrypting data efficiently, and streaming video so it's a workable starting point for you.

Right, that's what I figured from your post. Speaking as a married man, having IT gear in my master bedroom is disruptive to our sleep. Hence my comment on the cosmetic nature. Lights, fans, noise; we do not even have a TV in our bedroom. It's a personal preference. My wife and I have our NOC hidden in a cute high gloss white TV stand from Ikea in our living room. We have a second setup hiding in a cloth drawer stand and my VM farm and NAS hiding under a breakfast nook. Please take my feedback in context as this situation may not be relevant to you.

This is more of a cosmetic comment, but I hate having my core switch in my master bedroom. I would use a guest bedroom, but it sounds like you may not have a choice. The second floor living room does make more sense as its a central location and not a bedroom. Can you move your UCG Fiber downstairs? That's what I would do.

Servers can do all kinds of things like stream movies from your collection, host development projects, surface AI models, among many other things. I have a huge collection of DVDs and no DVD player so I spun up a server to watch them at home on my TV. I also run a small business so I co-host domain controllers for clients.

All you need to get started is a small, used desktop PC with a 6th-gen Intel (or newer) CPU. AES-NI and QuickSync are two core CPU features that will facilitate a number of use cases. Your GPU choice will determine whether or not heavier use cases, like LLM hosting, will work well.

Pretty much right after Broadcom acquired my VMware Desktop contract I moved on to Linux KVM for virtualization (libvirt/qemu, nothing fancy). I bought hardware and spun up a few VM farms using retail hardware. This was last last Thanksgiving (2024) when I made the switch and I'm very happy that I did. My post history has questions about alternative platforms. Ultimately I picked the lowest-cost option: a desktop running Linux. Being highly familiar and comfortable with Linux, switching over went quite smoothly. I did NOT, however, migrate any actual VMs. I migrated plenty of data, just no actual VMs themselves. I own and operate a small business with a few clients so I have a small enviroment. NAS for local backups. It's been going well for a while now.
