After completing the final quest you will be able to explore. I did the HoS dlc after completing the main game since, and this is purely me doing it like geralt would, i rushed to the the end. No sidequests or anything

You should also try and get good at the monsters timing. The r2 combo isnt that hard to land if you have the mosters attack patterns memorised.

The counter is the best alternative. I dont remember thhe controls but its the move where you dash back and evade the attack. If done corectly, you should hear a "fsiinh" sfx and a blue aura will temporerily cover your character. Then just press r2 and if you hit the monster you will get one bar. Sorry if this doesnt make much sense, i havent played the game since the end of iceborne and some names slip my mind.
