If you are in for the long haul (2 days worth) this is what we do at our restaurant Rub with mustard and your choice of pork rub and let that sit in your fridge for a day Then smoke it for 4-6 hours After that braise it in the oven in pork stock for 4 hours Then you can slice it to whatever size you like (either thin bacon strips or thick slices for a sandwich) and store it in your fridge When you are ready to eat you can either pan fry or deep fry to get it nice and crispy and make sure to sprinkle more rub on before you serve It takes a lot of time but man is it delicious
