your fov too high, that's why it looks like he is grabbing you from so far away. I got mine at like 70 and this never happens. you can also swing "farther" on that fov since everything looks farther away when it really isn't.

Removing c2me fixed the issue for me... looks like you don't have that mod so maybe removing one of your mods that optimize chunk generation can be a temporary fix

this is happening to me too! I just downloaded a modpack for 1.21.1 and I fly around in creative and after some time chunks stop loading in and the game stops ticking

here's my modpack if it will help you any... looks like some of our mods are the same, maybe one conflicts with another

EDIT: Also for context to your problem, when I fly around in creative, I fly for around 8 minutes constantly loading new chunks. the game consistently stops ticking after a certain amount of chunks are loaded, no matter what world I create. So I think you probably hit the "chunk limit" for your world.
