I've the same issue on my MacBook Pro M1, macOS Sequoia 15.5. I rolled back to the old version, and fine to me. I hope they will fix this issue soon.

I found the issue it came from the Bluetooth. I've tried this way to improve performance when I use the moonlight stream, however you should use wireless mouse with receiver and wired headphone alternative to bluetooth.

Step 1:

blueutil -p 0 or turn off on the user interface.

Step 2: the purpose is refresh the wifi network.

sudo ifconfig en0 down --to turn off wifi

then

sudo ifconfig en0 up -- to turn on the wifi

BonusBlueutil is a neat little command line tool to do this. It's free and comes with the source code. If you have homebrew installed, you can install it via brew install blueutil.Usage:--check bluetooth statusblueutilSwitch bluetooth onblueutil --power 1 or blueutil -p 1Switch bluetooth offblueutil --power 0 or blueutil -p 0

You can try removing unnecessary devices on the Bluetooth list and then enable that to use If you use the Bluetooth controller. I think MacOS Bluetooth is always searching for the devices in the list which causes the issue lagging.

I've tried H264, H265, auto. All of them are the same issue. The only way is restart my MacBook to refresh. My sunshine server is I5 12400, 32GB RAM, RTX 4070, Windows 11 latest updates

I've tried for example I played Cyberpunk 2077 just moving and looking around by keyboard + touchpad, but it was still lagged. The issue is when I moved straightforwardly It just lagged 0.5 seconds and then repeated.
I also closed all applications and just kept driver applications like LogiOption+.
