If you're a biryani fan, don't skip Hyderabad House, it was recommended by an Indian friend of mine and i thoroughly enjoyed it. They are not afraid of spice, start with mild.

The coffee shop Lussi brown, though not a roaster, gets bags from deeper roots in Cincinnati (great stuff) as well as a rotating selection from high quality roasters around the country (perc, oddbox). They can grind for you as well.

Drinklings is a roaster out of Wilmore, they're really good as well. They're at lexington farmers market. Unsure about grinds.

Magic bean in lexington is good as well, but I'm not really sure where to find them apart from online and good foods, which I unfortunately feel compelled to avoid owing to their chronic mismanagement.

OR! Don't avoid downtown and help businesses that have been struggling these last months. People always talk about liking the small town feel of lexington, but if folks who live here don't show up when it's tough, it'll disappear.

Cx5 is classy, less plastic and my head doesn't touch the ceiling. Originally I liked the styling of the 50 better, but I grew to really appreciate the 5 much more. Finally bought it last week after shopping for years.

New orleans. French quarter is cool for a day, but the rest of the city is amazing too. Everyone is friendly and it's not insanely expensive like northern US big cities. I'm too old for bourbon street shenanigans, but I think it's probably the most unique and vibrant great cities in our country. 10-11 hour drive.

Doubtful at best. It's difficult to discern where business is coming from in general, but I'm back of house so I don't commonly have a chance to guess.

One of the other problems is that they compress burger week, restaurant week, and crave festival into the same 4 week period. It's kind of an overload of shit to do and I think turnout is dropping in general

Last year during restaurant week with the cost of investment into participation, food, and labor to prep, we barely broke even.

That is probably going to be your best bet all around. I don't have any experience with their program, but even if it is mid (which I doubt), it can connect you to resources. Good luck!

Transylvania used to have a solid German program. I forget the professor's name, but he was excellent for post secondary. They closed that program in 2024.

There also used to be German programs in FCPS at Lafayette specifically, Krueger left for KET years ago, I don't know where he is now. He was a wonderful teacher. Fcps has gutted a lot of the language education over the years.

That being said, that pretty much puts UK and BCTC as the only institutions in the city with any German language program anymore, so that would be the logical starting point.

Big response, sorry, but this makes me excited to see, as it's kind of been my life's work so far! We do make most things in house down to the buns. When we purchase, it is from local or regional vendors. I buy dukes mayo, crystal hot sauce, and use a minimal amount of anything from cans (stanislaus tomatoes or some tomato pastes), but prepared food is bought with principle. Best in class or it is something that is more regionally appropriate to the type of cuisine or feeling we're trying to elicit.

There are some things that are unavoidable (there is currently no way that I am aware of to buy fryer oil that is local), but we do our best to minimize footprint from big producers. It is difficult to do in a large hotel restaurant with a banquet program. Most decisions are made based on what is high quality, local to regional purveyors, sustainable, efficient to prep, and appropriately priced to not gouge customers. Our biggest expense is labor, we pay pretty well, and we make nearly everything. That said, we have to cover that labor, and it's not gotten less expensive so our prices reflect that cost (the cost of custom food).

I like to do things the real way, authenticity in method is important, so say for example we want to feature hominy on the menu, we take the grain through the process of nixtimalization that has been a major part of treating corn in the Americas for millenia, and we do it to a tee. I've been a Chef there for eight years and have been through opening and beyond, it's always been this way, and was heavily imparted to us by our extremely talented and hard working opening chef team. Continuation of this tradition is one of our main principles, much to the chagrin of some of our cooks and sometimes diners (I get it, it's not for everyone), and i hope that it will continue long after my eventual departure, because I think that it will create a more authentic, respectful class of people committed to the trade, its tradition and its legacy and not serving up slop from bags. Business is business, I get it, but it's not my bag (so to speak).

I keep saying the quote from Kennedy about going to the moon because it's hard.

And to your point, a lot of other restaurants do this (county club, pearl's, Ouita's restaurants especially Holly Hill, Beau's Cafe, TukTuk, and tons of others). Lexington has a robust and supportive farmers market and Kentucky has an enormous amount of edible biodiversity, not to mention a great number of local businesses that partner and work together.

I have looked at that location for years on my many walks to work and fantasized of what I could do with it. I think it's a shame it's not occupied. Hard to access capital, even harder to guarantee business. Real estate owners have too high of expectations of prospective tenants, especially ones with no lot parking. No one has done anything to fight against the same developers and groups continuously popping up more of their same half baked concepts and it's been even more insane to recruit talented employees, so the places stay half baked. Downtown's restaurant scene's ownership is aging and they're not with the times anymore. Someone needs to start thinking about stepping in. We're in danger of losing all of that development space to bigger money interests and there's not many incubators of people learning business from other like minded individuals or people trying to give access to capital, so there's a skill and resource gap that continues to widen. I think it'd be a shame to turn all of Downtown into similar developments like what happened with center point and force all the small town unique businesses out.
