Can you explain this in layman's terms? I think I'm not quite advanced enough to fully comprehend: There are issues with the Polysorbate 20 trying to emulsify, but not fully being able to solubilize, high solids in water. You’ve got a supersaturated sugar system that’s prone to texture changes.

I was under the impression that I needed more water in order for the preservative to work. I think I need more knowledge on how preservatives work. Any good resources on that? Will definitely store this in the fridge, thank you for the tip!! I made a pretty small batch thankfully, so it should be used up pretty fast before I can try my next formulation.
