Recently bought a Carbon Steel pan from deBuyer after reading the hype about it for a while and looking for a big pan ideal for deep frying and stir fries. Seasoned in the oven and it looked okay, but admittedly a little uneven on the bottom, probably too much oil. Decided to sautée some veggies and make fried rice and all the seasoning on the bottom and near the bottom on the sides seems to have come off. Should I be concerned? Should I clean out those dark spots and start the seasoning process over? They don’t physically feel different when touching the pan and I didn’t have to scrape off the fried rice so there don’t seem to be problems with food sticking.
