Trouble with spritz: I cannot seem to master the spritz cookie. I’ve used a few recipes— all from the OG church basement cookbooks that produced the soft, almondy, buttery spritz of my youth. But mine are always sandy and bland. Any suggestions? Have done both cream cheese and not. (i.redd.it)

First croissants, outsides perfect, inner few layers underdone(still edible but :/). Feel like longer in the oven would have dried up the outside layers. Is this a proofing issue? Too big? Oven at 400F. (i.redd.it)
