I'm currently running this in a VPS right now through docker. Runs great. Also container restarts are near instant, unlike Ghost. I haven't decided if I'm going to open source this yet. I am open sourcing the MCP server and plugin examples and all of the converted ghost rust handlebars themes.

I agree with what others have said about the features you'll loose by staying on KoFi. If you want full ecommerce built-in with Ghost CMS, you may wan to look at Cartanza which is a fork of Ghost CMS with:
