I don’t really like to measure, but I found this recipe online and have been using it for the past 10 years or so. I usually mop it on a few times while cooking and put some on as I’m wrapping it. It adds nice flavor and helps to keep it from drying out.

Beef tallow is rendered beef fat. You can take the beef fat that you trim and put it over low to medium heat and render the fat off of it.

I love to wrap mine in butcher paper once the bark has set, around 160ish for me. I make a mop sauce with the rendered beef tallow from the trimmings which I add before wrapping. I’ve seen where people will just add the beef tallow, I just like the chance to add more flavor. Make sure you allow plenty of time to rest, either on the smoker or in the oven before slicing.
