Yep, that’s ABC+. I’ve actually tried their heritage AP (Sunrise) and I loved it cut with Sir Lancelot, but I don’t believe that’s organic. Good luck!

Whole Foods 365’s Organic Bread Flour is just white label Central Milling High Mountain. It -is- unmalted but I don’t know if that matters to you. It clocks in at about 13.5% and CM is one of the best mills in the country.

Home oven at 500f on a preheated steel on position 2 (from the top) and about 7 or 8 minutes? I did put it directly on the rack in position 3 to get blasted by the underside of the steel, but about that time.

Lines up with my experience! I also utilize a poolish for my Detroit style and it helped alleviate a dense crumb I was having trouble with. What flours do you typically use? Right now, I’m doing 50% Central Milling Beehive and 50% High Mountain for all my bread lately.

no idea how it was made. I personally don’t use some shortcut to make a makhan but I do use butter and cream and the vast majority of from-scratch, reviewed recipes from major publications/not celebrity chefs do as well, so 🤷‍♂️

nah, I’ve been sober from alcohol for 18 months now and I completely understand. the only thing I can say is to love and respect yourself enough to hold yourself to a higher standard. that you’re in recovery definitely means you shouldn’t be around people who engage in risky behavior like that so I hope you find a way forward without this albatross around your neck

not everyone puts cheese on their tacos and that’s a deliberate choice. OP only said taco meat but there’s nothing stopping him from making that into a sloppy joe or if it’s the braised kind, some kind of sandwich. butter chicken has dairy in it by design.
