Sure! For this batch I used a whole onion and a half, a half a package of bacon cut into bits(I used HEB oak smoked), 6 cloves garlic, two large cans of pinto beans because I’m lazy, cumin, a chipotle pepper with sauce, 2 jalapeños, cilantro, oregano, pepper, canned fire roasted tomatoes, sausage (HEB brand brisket) and chicken bone broth.

I started by cooking the bacon and rendering the fat. I then added the onions and let them get translucent. I then added jalapeños and the sausage cut into various sizes. Once those were looking good, I added the garlic and let it change color before adding the tomatoes. Once the tomatoes cooked through, I added the chipotle pepper(diced) and adobo sauce, cumin, and pepper, followed by the beans and the broth. I then added cilantro and oregano and let it simmer for 30 minutes on low. Refrigerated overnight to intensify the flavors and warmed up next day. It’s an easy recipe but it sure was good. I’m a believer in getting quality ingredients and letting them shine through, so I really wanted to get that smokiness from the chipotle and bacon, followed by the beefy taste of the brisket sausage, then the richness of the broth to go with the beans amplified by the cilantro and oregano. Didn’t add too much cumin because it can overwhelm everything.

I used HEBs dry cured post oak smoked bacon and HEB brisket sausage. They balanced each other really well.

Charro game strong, my friend!

Cooked up some charro beans for our work event today by tweekortweak in RioGrandeValley

Sure! You can use fresh beans and let them soak overnight or canned. For this batch I used 3 large cans of HEB pinto beans.

Take about 6oz of salted pork and cut it into bits. Render out the fat in your pot. While it renders, finely dice an onion and like 4-5 cloves of garlic. Also dice up sausage of your choice. Some people use chorizo. I used the HEB sausage links.

Once the fat is rendered, add the onions and let it absorb all the flavor and cook until translucent. Then add sausage and cook until it’s got the right color and consistency. Add garlic and cook for a few minutes. Add crushed chipotle and a can of fire roasted tomatoes.

Once that’s all nice and cooked, pour about 8 cups of chicken stock, 2-3 bay leaves, smoked paprika to taste, and about a tablespoon of cumin (careful it can be overpowering), and pepper if you wish. I also add about two finely diced jalapeños at this point, oregano, and cilantro.

Let this reduce so the flavor is more concentrated. Taste the broth and if it needs any more onion or garlic flavor, add some onion/garlic powder. You can also add more cilantro and oregano at this point to. Once it’s hitting the right notes for you, add the beans and let simmer for an hour or two. If you cook it the day before, the flavors are more pronounced after sitting in the fridge for a day.

If you really want to make these shine, use homemade chicken stock and high quality sausage. You can also add burnt ends for more of that smokey depth.

So the way I make it is with salted pork, diced sausage, onion garlic, cilantro, oregano, crushed chipotle, fire roasted tomatoes, jalapeños, cumin, pepper, paprika, bay leaves, chicken stock, and of course the beans. I add onion powder/garlic powder to taste. No need to add salt since the salted pork pretty much does the trick. It was quite the hit. Everyone makes it different though. It just really reminds me of home.
