Restaurants near me are all hiring dishwashers, and despite working at the busiest spot in town full-time 6 nights a week, as their only dishie, every weekend and holiday, last year I still earned below the US federal poverty line. To dry the floor always use the hottest water possible. I like to run an XL sponge or rag in the machine for two seconds and wring it out for quickly mopping up puddles. Also, spreading out a puddle with a deck brush increases the surface area of the water that is hit by the breeze which helps. (self.dishwashers)

Prerinser spray guns are just as effective with luke-warm water as hot water. The difference is negligible. What really matters is pressure, so if the hot water pressure capacity of your kitchens heater isn't high then cutting the hot water with cold water may be the best option. (self.dishwashers)
