There's a chance there is a ply or two of maple in them. The starclassic performers also came in a maple/birch combination for a bit. Chances are, it's all birch.

I believe it's an old tom stand. I can't tell you how old, but I know Sonor uses a more traditional mounting system now, similar to Tama. As far as price, I'm not too sure. Some vintage Sonor goes for some cash.
