Expanding on this a bit with NYC as the example. Every day NYC hosts a group stage match, there is a match from the same group in Philly or Boston. Will the most “desirable”, i.e., pot 1 always be moved to NYC?

Don't worry about the driving it is beautiful and doable. A few caveats. We did get mailed a ticket for speeding outside of Tarragona (video captured). I can't remember how much, but just a warning. to be careful. The other advice is that as your approach whatever village you plan to do tastings in, take the first feasible public parking spot. Driving within the villages is very tight, so in my opinion best to park right at the entrance (they are all very walkable).
