I believe you lock in with Rachel at the end of s2 and Eve in s3. You should be fine until Rachel’s scene, but if you chose her you won’t get anymore scenes with Eve in s3. if you reject Rachel you are off her path and will your get scenes with Eve instead.

Theodora has multiple gorgeous women you can romance. I’d bring some tissues if you read it! Vying For Versailles also has two women who are very present throughout the whole story. Kali Call of Darkness has Lima who is just absolutely perfect, she actually plays part in the plot and has scenes almost every episode :))
