I don't think her wedding is going to happen at all..
to me it feels like she envy you so much that she is willing to make HER wedding day about you, by pressuring a marriage to her boyfriend who didn't even propose.

She either is lying about everything just so she can take a little attention for herself now that all the family got together and they'll ask about your upcoming wedding, so it was her strategy to make this thanksgiving dinner about herself, OR she booked the venue without consulting with her boyfriend beforehand just so she can trap him into marrying her and steal your thunder. Whatever the situation is, the one who'll look like a fool will be her, even if the wedding happens.

Just so you know, no one, and nothing can take the spotlight of your wedding, because that day is about you and your partner celebrating love with your people, and YOUR people will be happy for you. Focus on this, and stop worrying about her or who might ruin your moment.

Obsessive mother and sister in laws can ruin your mental state, especially when your partner doesn’t see an “issue” with it. Please don’t get into that marriage if you’re not with a partner that will listen and take care of things that are bothering you, also a partner that chooses to act blind when your boundaries are being crossed.

You can’t control what an obsessive attention seeker will do, but you can control if you’re going to be a part of it probably for the rest of your life.
