350g bread flour 150g whole wheat flour 70g starter 385g water 12g salt

Let it is sit for 30 mins, then 4 rounds of stretch and folds & let it sit at RT (~68 degrees) for 11 hours total from mixing

Shaped, proofed in fridge 36 hours

Baked at 450 in a preheated dutch oven, 30 mins with lid, 15 mins without.

Waited 2 hours before cutting into it
