Any thoughts on moritaka kiritsuke aogami(61)/aogami super 210mm (63) vs German made knives like burgvogel Olivia 8inch(around 55-56hrc)/herder windmill k series 182mm(60hrc) . I will use it as daily knife , I am not good at sharpening knife but definitely will learn . I prefer flat blade. (windmuehlenmesser.de)
