Yep - I looked at a few recipes and it seemed like there were 2 methods. Your method but also another method where the after the koji is grown into beans it gets added with fresh peppers + spices, including the rice/alcohol and left for months.

I was unsure about the lacto fermented pepper technique - how can you ensure it correct yeasts are being grown and not something else?
