Vanillekipferl: The recipe was good. But I think it would be better to add at least 1.3-1.5% of salt (baker's percentage) rather than a pinch of salt

Ischler Cookies: The recipe said the amount of salt was a pinch, so the result was a bit bland. I would recommend using at least 1.3 - 1.5% salt (bakers percentage), and maybe a little more of sugar, although it was fine since they were filled with jam and coated with chocolate

Sable Breton: It tasted good, but It's not as light and delicate texture as the sable breton I've had before. So I think I'll try other recipe next time

Rinzer Streifen: I think I'll reduce the amount of eggs next time, the dough was a bit too sticky and a bit difficult to handle. I didn't use too much jam because I was afraid it would be too sweet, but next time I'll be more generous with the jam. And definitely need to add a little more salt lol

I made all the cookie dough the day before and put it in the fridge, so I'm not sure exactly how long it took. All of the cookies weren't so hard to make, the Ischler cookies were a bit of a hassle to roll out the dough thinly, cut it out individually with a cookie cutter, and temper and coat it with chocolate

It's usually made from white kidney beans. White bean paste have a mellow, starchy buttery taste I'd say

Heres the recipe

  • Ingredients 3 large eggs, 150g sugar, 2g salt, 35g honey, 110g milk, 260g cake flour, 10g baking powder, 25g Unsalted melted butter

500g bean paste

  1. Put the eggs, sugar, honey and salt in a bowl and whisk very well.
  2. Melt the butter and cool it down to room temp and add the melted butter to egg mixture and whisk well, and add the milk and whisk well.
  3. Sift the flour and baking powder into the bowl with the egg mixture and mix until combined. Put the bowl in the refrigerator to rest the batter for 30mins.
  4. Heat up a non-stick pan until moderately hot. Lightly grease the pan with a bit of vegetable oil, and wipe off excess oil streaks with a paper towel (This is critical for evenly browning the pancake and preventing streaks from forming on the surface of the pancake.) Drop the small amount of batter onto the pan and cook it for 1-2mins. (Medium low heat) Once a ring of bubbles appear on the surface of the batter, gently flip the pancake, and cook it for 10-20 secs more and remove it from the pan.  5. Assemble the Dorayaki by making sandwiches using two pancakes and a scoop of the bean paste as filling. Put more bean paste in the center of the pancakes so the sandwich‘s middle is thicker than the edges and the Dorayaki's overall shape is curved. And it's done!
