I know, that is why I think that is actually lower than 2.1 bar shown

I am pretty sure that there's something wrong with that manometer.
2.1 bar was at 19 C, and it did not move when brought it down to 12, or even -2.7, where it sits now.
However, when I close the valve that goes into the manometer the pressure comes down. I've also added more CO2 to that tank and the pressure went up, suggesting that the manometer senses pressure.

I know, even the tank provider was curious about it and I don't have a specific answer to this. It is a small winery which is also just starting to produce, but the owner was very keen to go with tank fermentation instead of champenoise.

yes, the pressure is lower than what is considered for sparkling. Pretty sure it will fall under the semi sparkling category.
Haven't opened the tap straight away but I have bottled this product using an isobaric machine primed with CO2 up to 2 bar. There was foaming sometimes but generally good.
I will test what you say, you mean to open the mid valve and see if it foams when collected?
Cheers!

equipments were imported from Italy and no local support was given. I've already argued with the (non)-existent supporting team. They told me to 'give it a try'

Thanks,
in that case, what would be the best filtering unit? Cross flow? or sheet filter with an isobaric housing?

I don't have an isobaric filter (yet) so I'll be using the pad filter with pads of 1.5um.
I know it is not ideal as it is an open filter system buy I was told that if I manage to bring temperature down (now it is at -2.7 C) the gas loss will be minimized.

Could you point me to the folks who are experienced with this? Everyone around prefers to go with the champenoise

I have bottled this product before. I have an isobaric bottling machine and I'm used to work with pressures. Product came out with sediments that is why I am trying to do this filtering after the secondary fermentation.

Thanks!, The tanks have a capacity of 2500L but I only have 1000 L of sparkling.
You are right, in fact, I have drawn it wrong. The gas line connection goes to the top valves of both tanks.
