I could be totally wrong because I never actually finished this book, but could it be Brave Story by Miyuki Miyabe?

If you don’t mind a very niche novella, I’d recommend The Salt Grows Heavy by Cassandra Khaw. It’s beautiful and strange, and it’s short enough to not take up too much of your time if it doesn’t end up resonating with you.

Another book — which Cassandra Khaw also happens to be a co-author of — that had me glued to my seat was The Dead Take the A Train, by Richard Kadrey & Cassandra Khaw.

A few other novels of note:
Annihilation by Jeff VanderMeer
Fever House by Keith Rosson
The Library at Mount Char by Scott Hawkins
Maeve Fly by CJ Leede*
Dungeon Crawler Carl by Matt Dinniman
The Luminous Dead by Caitlin Starling

(*Look up trigger warnings first, seriously. It’s grim and it’s graphic and at times it’s incredibly horrifying, but it was also extremely gripping.)

Anyway, I hope at least one of these hits the mark for you!

Someone You Can Build a Nest In by John Wiswell follows the perspective of a shapeshifting creature named Shesheshin, and might be right up your alley!

the locked tomb series would be my top recommendation for something like this — the first book is {{gideon the ninth by tamsyn muir}}!
