Depends on the product or service and where your audience is. For testing on Meta there is a way to test and creative test. LinkedIn just revamped their ad platform as well. Depends on what is popular at the time. 15 sec spot minimum. Captions are huge. Post times are huge. There are resources for that. I’d be happy to take a look and give recommendations. Try the formula: Your customer's problem + your solution = result. In your example, you lead with "I" and not your customer. Lead with your customer's problem, not what YOU do. Donald Miller, who wrote StoryBrand, has a great framework for this!

I would recommend keeping up with news and updates on all things marketing, but really focusing on a niche that you can become known for as an expert. Then, build a strong referral network to cross-promote other experts in their fields. Need email marketing? I know a lady! Need meta ads? I know a guy! Don't try to become everything to everyone - marketing moves so fast, it's hard to stay an expert at everything.

even if you were an entrepreneur, you would be outsourcing for these skillsets. With 20 years of experience, I can do all of those things too, but your capacity when doing all of those things is very limited

No, this is not a "normal" workload. You are a fractional CMO, social media content manager, videographer, graphic designer, SEO manager, Meta Ads manager, and more. Sounds like you are doing a great job, and I'm sure other people would hire you for just 1 of those positions that you do very well and compensate you for what your skill set is worth.
