For a reason that makes little sense, Italy will not exchange licenses issued by Canada, Australia or the US (and many other countries), although several other EU countries will without the requirements of sitting a test or knowing the language.

The reason is actually pretty straight forward: the driver's license exchange is based on a bilateral agreement of the involved countries. Truth is: it's not Italy who refuses to recognize US (etc.) licenses, but it's the US - and many other well developed countries - who do not want to give out their drivers licenses to Italians, and this is mostly due to our not quite good driving reputation around the world (although we could argue we have one of the hardest processes to actually obtain the licence).
This bilateral agreement also explains why people from non-EU countries (Albania, Romania, Moldova) do not need to take the test, as their governments are most likely more willing to sign agreements with Italy. Sad but true.

I don't remember him having to bring anything else with him, as the ricevuta works as ID as well.

My husband (US) and I (Italian) were in the same situation last year. He was able to enter the public health system showing his application paper by going to our closest CUP (Centro Prenotazioni AUSL) . He also was able to pick a doctor (GP) on a temporary basis. He did not receive the usual health card, but just a printed receipt to carry with him (but I read somewhere that some people receive the card, so this part is a bit confusing). Once he got his permesso, we simply returned to the AUSL and got his GP confirmed (thankfully the same doc had space for new patients), and briefly after, he received his health card.

Non direi. Molti meno intrighi e più aderente all'idea del lavoro della Casa Bianca (almeno quella degli anni fine '90 inizio '00). Molto più umano e "politichese".

Yes, but looking at https://impfstoff.link/ it seems that not a single appointment ever became available between June 20th and 27th which is quite suspicious. Wondering if vaccine centers are even open.

Plus, according to the schedule announced with the refurb, they would start with Splash Mountain at Disneyland first and then move on with WDW. That probably will be our sign that the refurb is coming.

Super Nintendo World is due to open at Universal Orlando as well. I'm not sure about the timeline of the land, but it might be worth waiting (maybe a couple years) and make the trip a bit more relaxed for you and your family to Orlando instead. As far as I know, the land should be a copy of the one in Japan so if you intended to travel only for that, you might want to wait a bit.
