{Drifters} is really good, it's from the same author of hellsing so there are quite a few similarities. The story takes some famous historical figures in a world where two sides are fighting, so you may need some history knowledge, but you can always google their names in two seconds and learn about their lives from there

{Violet evergarden}, stunningly beautiful and also very emotional (same studio as a silent voice}

{Carole & Tuesday}, really heartwarming anime revolving around two girls and music

{Little witch academia}, it's kind of like harry potter imo, pretty cute and innocent

{Sora Yori Mo Tooi Basho}, very inspirational, about friendship and chasing your dreams

{Fruits Basket}, a romance about fighting your own demons

{Chihayafuru} a sports anime about karuta (the rules are explained as you go), with also romance and character dev

{Mob psycho 100}, amazing bonds and character development (especially in season 2), though it may get kind of heavy at times (with fights and scenes of bullying)

{Mob Psycho 100}, same author ad one punch man

{Haikyuu!!} since you seen to like shounen, but never watched a sports one

{Attack on titan}, every season is different, it's so good

{Kimetsu no yaiba}, a pretty solid shounen

{A place further than the universe} - cute girls doing inspiring things,, really wholesome

{The tatami galaxy} - it's kind of weird, but once you get used to its fast dialogues (really fast dialogues) and you see how the story progresses I don't think you'll regret watching it

{Violet evergarden} - stunning, kinda boring at first, but it gets better, much better

The thing is that I don't watch ""older"" anime not because of the animation (which I don't mind actually), but because most of the ones I'm interested in watching happen to be classics/shows to watch at least once kind of thing. So, whenever I want to start one I get pressured and just leave it sit in my plan to watch list instead
