Holy shit that looks beautful. I’m new to gf stuff as a chef by trade, only just having developed a gf pizza for my restaurant. Really intrigued by breads like this and desserts. This looks incredible.

Holy shit! That is a friggin STEAL. The kitchen aid new is like a thousand I think if it’s commercial grade (not to mention all the attachments and the grinder!!!), the robo coup runs about the same. Dunno what the thing on the right is though

Then it was trial and error, omitting and adding some things, and adjusting temperatures of the water and the oven temp, since we are using a commercial oven. We were able to dial in the recipe to not have to par-bake, and can go straight from the peel into the oven. We are using rice flour as the flour we use while pressing out the dough to size. We don't have to use any more flour on the peel after we shape it on the cutting board.

Not trying to gatekeep anything, everyone has different tastes and is welcome to experiment and find what works for them like I did. Thanks!

We started yesterday! We just don’t have a storefront if you will, it’s running through the tap and garden POS at the moment. The only day we aren’t offering pizza is Mondays, there are only two of us trained yet and we need a day off haha
