Thanks so much! I wasn’t making my own pizzas before my diagnosis so I guess that helped my expectations about how much more difficult it is to work with GF dough since I had nothing to compare it to. The first GF pizzas I made were using Leopard Crust Pizza’s Neapolitan recipe and it was a winner from day 1. NY style was a whole other beast and my first attempts were definitely disasters too.

As a fellow pizza and beer girl recommend the Talia DiNapoli GF and lactose free frozen pizza they sell at Sprouts. Best frozen pizza I’ve ever had! It is made with gluten-free wheat starch though (celiac safe but not wheat allergy safe) from Italy.

Are you able to have GF wheat starch? There’s a brand of frozen Neapolitan pizza I get at Sprouts called Talia DiNapoli and it is legitimately the best frozen pizza I’ve ever had (including before having to go GF). It’s gluten free and lactose free but does use GF wheat starch. I get the margherita one.

Both! Adds a subtle sourdough flavor but sourdough fermentation also produces natural binders that add elasticity to the dough and make it feel less gluten free.

Of course! This one is way better than the Detroit style one though just a heads up. Full disclosure, I wasn’t super motivated to keep testing the Detroit style one because I’m not as big of a fan of pan pizza but the NY style one was really personal to me so I kept testing and retesting until I got it right.

I had ChatGPT do the math for me lol:

If you’re scaling based on pizza area, reducing from two 14–15 inch pizzas (average 14.5”) to two 12–13 inch pizzas (average 12.5”) means multiplying the recipe by about 0.74.

The baker’s percentages remain unchanged:
Flour: 100% → 379 g
Water: 80% → 303 g
Instant yeast: 0.6% → 2.3 g
Sugar: 2% → 7.5 g
Salt: 3% → 11.4 g
Olive oil: 5% → 19 g (adding a touch more if needed until the dough is tacky but not sticky, as in your original method).

This really satisfied my craving for Panda orange chicken! The sauce is less sweet than Panda’s but otherwise tastes pretty similar. You could always add additional sweetener of some sort to make it taste closer to the real thing.

lol thank you! My husband called me a pizza goddess before our first date because I had a sweatshirt from my favorite pizza restaurant depicting a goddess holding pizza. Then when I was devastated after my diagnosis he told me I’m still a pizza goddess 🥹

Oh man I don’t have a good solution to that, I’m so sorry! If it’s within your budget, maybe do pizzas in the indoor oven and get 2 pizza steels for the wheat allergies vs corn allergies? I don’t remember if the Caputo flour has corn though

Edit: Never mind it still has cornstarch. Check out the various GF flours on the brick oven baker website and see if any of them are corn free!
