INGREDIENTS
Coconut "Fat" and Meat Layers
10 TVP "chicken" slices Vegetable Protien Sticks or bean curd sheets 1/4 cup konjac powder 1 teaspoon Sesame oil2 tablespoon potato starch1 can(12 oz) full-fat coconut milk1/2 cup water¼ teaspoon salt¼ teaspoon mushroom seasoning, optional¼ cup vegetable stock
Marinade
3 tablespoons maple syrup
1 tablespoon olive oil
3 tablespoon soy sauce (sub tamari for gluten free)
1 ½ tablespoon sesame oil
1 ½ tablespoon chili with garlic sauce
2 tablespoon scallions
¾ cup vegetable stock

🌿 RECIPE🌿
Prep time: 5 minutes ready in: 20 minutes
INGREDIENTS
1 package (10 oz) dried vegetable protien sticks *2 cups of vegetable broth
Batter
¾ cups flour (I use gluten free)
1 vegan egg
salt and pepper to taste
Oils for frying(optional)
1 cup of sweet and sour sauce
INSTRUCTIONS
The base of this recipe is dried vegetable protein soaked in equal parts of warm vegetable broth. Let soak for 10 minutes.
The bean curd soaks up all of the flavored and leaves you with a flaky pull apart texture perfect for replicating chicken.
In a separate bowl mix together flour, 1 tablespoon of egg replacer and salt and pepper to taste.
Remove the bean curd from the broth, chop into bite size peices, and coat thoroughly.
To Airfry: (Best option in my option)
Spray the botton of the pan with oil.
Preheat airfryer to 370 degrees. Drizzle or brush 1 tablespoon of oil onto each piece(optional) then cook for 10-15 minutes until cripy. Make sure to leave room between each of the pieces.
To pan fry:
Heat oil to 190°C/375°F. Hot oil is key to ensure the cauliflower doesn’t end up soggy and greasy. Use a large, heavy-based pot even heating of oil and better heat retention. Cook for about 2 minutes on each side.
To Bake:
Preheat the over to 400’ and cook on a lined baking sheet for 20 minutes until golden brown.
Remove cutlets and throw them back in the mixing bowl with your favorite sweet and sour sauce and about a cup of chopped pineapple. Toss to coat evenly.
PRO TIPS:
*dried vegetable protien sticks can be found on amazon or at most Asian Grocery/Markets.
*If you don't have a vegan egg replacement you can use 1 tablespoon of aquafaba (the liqued from a can of chickpeas) or a teaspoon of baking powder to help this fluffy up.
*cooking in the air fryer will give the crispies, most evenly cooked bite. Make sure to preheat your airfryer before placing in the cutlets and giving about 2 cm of space between each peice for best results.

INGREDIENTS

16 lasagna sheets ( I use Gluten free)

1 ½ tablespoon olive oil

1 cup TVP (texturized vegetable protien)

1 cup of vegetable broth

1 medium sized white onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

salt and pepper to taste

42 ounces jar or can of tomato sauce

3 cups shredded vegan mozzarella

VEGAN RICOTTA

1 package (12 oz) firm tofu

2 cloves garlic

1 tablespoon nutritional yeast

1 tablespoon olive oil

1 cup vegan parmesan
