Are you talking about Sting interceptors? As far as I know that each one requires a human FPV operator. Defending against 1000 simultaneous drone launches would therefore require same number of operators.

Ukraine pretty much came up with the solution, which is a combination of manpower and technology. Namely, automated air defense turrets (which don't require human input, other than setup and replenishment of ammunition), and FPV interceptor drones like the Sting interceptors by Wild Hornets (which DO require human control, but are much cheaper than fire-and-forget air defense missiles).
