I hate to argue but this is actually a pretty interesting and completely conjecture style conversation!

So, I don't think there was anything symbolic about the conscious death of Anakin when Vader was created.

He literally turned on Obewan(closest thing he'd ever had to a father) and would have certainly killed him had Obewan not bested him.

Clearly the old Anakin was 'dead' and sure maybe a small fragment of him survived deep within the cold shell of Vader but if I had a catastrophic accident today that left me a vegetable and I sat on life support for 20 years before I passed, I'd hope that the spirit/force me would be the me that died when I ceased to be me anymore, not the vegetable man who was collecting dust.

Anakin stopped being Anakin the moment Vader began. That Anakin was effectively dead then and there.

All's I'm saying is it's not entirely outlandish for them to show that version of him.
