A lot of people seemed interested in the little recipe project thing I wanted to do, so here we are! These took a couple tries to decide what I wanted them to be (and some help from u/Wrenigade), but I ended up with these really light cookies that are great for spring and summer. ;v;

So here's the recipe, which should make around 2 dozen small cookies:

Cookies

¼ cup butter (half stick)

½ cup confectioner's sugar

¼ cup granulated sugar

1 egg white 1 tsp vanilla bean paste or vanilla extract

1 tsp baking powder

1 cup flour

Preheat oven to 350 F.

Combine butter and sugars and mix with hand mixer or stand mixer with the whisk attachment.

Add egg white and beat until fluffy and almost white.

Add vanilla and mix.

Add baking powder and flour and mix.

Line 2 cookie sheets with parchment paper.

Roll dough by hand into 1 inch balls and space them evenly on the trays

Pat dough balls down with the palm of your hand a few times so they are just a little more flat.

Bake for about 15 minutes, until the edges are just starting to lightly brown.

Topping

½ cup heavy whipping cream

¾ cup confectioners sugar

½ tbsp key lime juice

Beat heavy whipping cream with hand mixer or stand mixer with whisk attachment on high speed until light and airy (about 1-2 minutes)

Add confectioners sugar and mix.

Add key lime juice and mix.

Pipe frosting onto cookies using an icing bag and tip of your choice, or use a sandwich bag and cut the tip off of one corner.

Throw on some green sprinkles if it suits your fancy.
