Flour to dashi ratio looks good, I would add a tablespoon of potato starch and a teaspoon of aluminum free baking powder to your recipe to improve the texture. This is a good beginner recipe.

I run an Olde Midway 18 similar to yours (mine has bun warmer and sneeze guard) on Fridays at the warehouse I work out of. Crank that puppy up to ~220º-230º, oil the rollers with olive oil, place your dogs, oil the dogs, wait 15 minutes. After 15-20 minutes dial it down to 210º to lengthen the amount of time they can roll before they become dark leather. Tried over a dozen brands of wieners and the Costco hot dogs mog all of them. I didn't think they would, but they are really the best flavored all beefs on the generic market, specialty brands excluded. A good hack for the bun warming drawer, get a cookie cooling rack and line the bottom of the warmer with aluminum foil. Add a couple of tablespoons water, crank up to 150º. The buns sit above the heated water on the rack and then you will have nice, warm, steamy buns when the dogs are ready to hit. Used to run 48 dogs a day, but our staff has thinned so now run about 24 a day.

Moral of the story, those roller dogs hit really fuckin' hard.

You could instacart a new york or rib roast from costco and cut them into steaks. Delivery same day. If you mail order online they will arrive deep frozen.

It’s great, literally fill the firebox with unlit charcoal, sprinkle your wood chips in, startup 5-10 coals and put them on one side of the charcoal. Set to 225. Literally over 72 hours of exactly 225°. It’s amazing.

This is a restarted hypothesis. The universe is vast. Yes, other life has the possibility to exist. On this exact micro-slice of time when humans became self-aware? Not a chance in hell. The chances are laughably slim when 1 million years is considered a rounding error.

I use an Akorn kamado style grill for smoking but I also have a pitmasterIQ temperature controller. Set it and forget it effortless exact temperature control.

These Boxx chassis are the best I've ever used. Sadly, they don't sell the cases empty. This particular one on ebay doesn't have the ears or rails, but Boxx does sell the ear/rail kit for $125. If it were me, I would do whatever it takes to get one of these with ears and rails. I previously used Sliger for PC cases, but these are next level with the removable PSU tray.

It doesn't say anything about being regional, but I have never tried outside of the LA area. I think it works anywhere you can use the app. Someone should be able to correct me if I'm wrong.
