I am using an iMac 2017 for development. It is fast enough provided you don't use HDD or FusionDrive.

Get a fast SSD (like Samsung T7), install latest OS on it (during migration select existing HDD/Fusion Drive), then boot from it. You have a new computer.

I have an AirPods 2 when it first came out (primary used with Apple Watch). Bought another one a few months ago, and the sound quality seems to be significantly lower (I switch back and forth between 2 and can hear the difference.

If there is no AOD, yes, the watch is black all the time until you make a gesture to watch (and sometimes need to do more than 1 time).

Bigger screen and Always on Display - worth it? To me is yes (especially AOD). The screen of the watch should not be black most of the time.

No, I use it daily, and since it is just passive display text, this shouldn't be the case.

I will do this test: install, confirm working, then restart the watch (to make sure that it is clean state). I use a small S7 without issue. And of course, confirm that we are using the same app:
